STRUCTURE OF DAIRY PLANTS, 2021

In 2021, as compared to 2018, the volume of collected milk decreased by 5.5%, that is, by about 25 100 tonnes, while the total volume of treated milk in dairies decreased by 6.8%, which means that about 43 600 tonnes less of milk were treated.

Concerning individual groups of products, an increase was recorded in the production of fresh dairy products (6.8%) and cheese (4.3%). The total production of drinking milk decreased by 9.3%, while the production of butter increased by 19.1%.

NOTES ON METHODOLOGY

Sources and methods of data collection

Data on the structure of dairies are taken over from the Croatian Agency for Agriculture and Food – the Central Laboratory for Milk Quality Control (SLKM). The data collected that way refer to the number of dairies by the volume of collected and treated milk and the volume of groups of products obtained. At the same time, data on the volume of collected and treated milk and the volume of produced dairy products are collected.

The Laboratory processes the collected data and submits them, according to previously defined deadlines and in suitable form, to the Croatian Bureau of Statistics for further processing.

Data on the structure of dairies are collected triennially.

The methodology for carrying out the survey on milk and dairy products is based on the Methodological Basis for Gathering Data on Milk and Dairy Products Statistics (NN, No. 42/13).

Coverage and comparability

There are about fifty dairies operating in the Republic of Croatia for which the SLKM makes analysis of purchased milk and from which it collects data on the production. The coverage includes industrial and registered small dairies, and since 2010 also agricultural farms and small cheese factories registered as processors and buyers of milk.

Confidentiality

Aggregate data for which there are reasons for confidentiality (small number of units, the dominance rule or secondary confidentiality rule), in accordance with the Official Statistics Act (NN, No. 25/20) and the Ordinance on the Statistical Data Protection Method, are treated as confidential and therefore are not published.
